From the cooktop
Jun. 24th, 2012 04:34 pmI threw together a quick dinner tonight. It started as one thing and ended up as another. I thought it was yummy, so here it is.
1 - 15 1/4 oz can Green Giant Whole Kernel Sweet Corn
1 - 10 1/2 oz can of Campbell Chicken Broth (Beef Broth or Tomato Soup would probably work)
1 Medium carrot sliced
1 clove garlic chopped
2 tablespoons of apple cider vinegar
1 teaspoon of ground ginger
couple good grinds of black pepper (~2 tsp of the preground stuff)
1 tablespoon of butter
Into a 2 quart saucepan empty the can of corn with liquid, and broth and put on medium heat. While the corn and broth are heating slice carrot and chop garlic. Put them in with the corn mixture. Add ginger, vinegar and pepper. Stir occasionally.
Let simmer for about 5 minutes or so, until everything is warmed. No need to over cook this. Once done remove from heat and add butter, for richness. Stir butter into soup until melted.
This should serve 2 to 4, or one railroading lion. :=3
The only salt in this soup comes from the corn and broth. I did not use any other seasonings and it came out perfect.
Even on a 90+ day this really hit the spot. :=3
