This time the lion had defrosted some boneless chicken breasts for last night's dinner and then promptly forgot that they were in the refrigerator.
So, the recipe is as follows:
1 medium potato sliced, with skin on, set into a casserole
4 boneless chicken breast set on top of potato slices
1 15oz can of mixed veggies and 1 6.5oz can of sliced mushrooms dumped on top of the chicken, juice and all
1 chicken bullion cube put into juices
1 red bell pepper put on top of everything
dried minced garlic and dried minced onion shaken on everything to taste
Cover casserole with aluminum foil and put into a preheated 375deg oven for 45 minutes.
The result? See for yourself:

On the left is a slice of homemade bread I had made earlier in the day. The wine is a white Merlot from Gallo.
As always the only salt in the meal comes from the ingredients themselves and the bread; so this was a very healthy meal.
The dinner was tasty and fulling, and I still have half of it in the fridge for later.
You know my mom always kidded me I would make someone a great wife. :=3
